Thanks for the tips on the St. George, Scott. I've imagined that pairing in my mind, and after salivating at the prospect, I have decided that I would like to try it!
This afternoon it was a glass of Un Emile with my girl outside in the grass, and then we parted ways only slightly, with me enjoying a glass of Duplais Balance and she opting for Duplais Blanche. I noticed after the fact that you had the Balance yesterday, Scott; great minds think alike, and so do ours!  It's World Oceans Day weekend, and I'll have to stop now so I can drive us both downtown for the talks and movies. I'm actually not a fan of the St. George, Jay. My suggestion in pairing it with those food choices was the only way I enjoyed it.

Mr. Duvallon makes some tasty stuff. Both Seville and la Veuve Verte are favorites of mine...
Hmm, perhaps I'll modify my plan of sampling blanches tonight for some of this instead.

Not necessarily absinthe, but still a French product: Duc de Breuil XO. Tasty, almost gone.
